I’d love to start incorporating more culturally relevant dishes into our lunch service, do you have any resources or recipes that have been successful?
Answer: There are some great global cookbooks. We have used Marcus Samuelson’s, The Soul of a New Cuisine, Chinese Immigrant Cooking by Mary Tsui Ping Yee and The Kids’ Around the World Cookbook by Deri Robins.
We also have a yearly International Door Decorating Contest during our UN Day Celebration. The top three winners get to choose the lunch menu with foods that are representative of their classes’ countries.
