We are lucky apples are grown all over the great state of NJ and modern harvesting practices have extended the seasonal availability. A versatile staple on our menu savory or sweet, every child loves an apple.

This recipe is a “2 for 1” special. It utilizes Kale and Apples! Foodies may have moved on from Kale but we love it. We were serving Kale before it was cool and we will continue to serve it because it is delicious and well we grow it year round in our AeroFarm that is situated in our dining room.

This salad is SIMPLE and blow your mind TASTY and not to mention nearly prepared as Mother Nature herself would eat a salad.

Kale and Apple Salad (Yields Approximately 132 4oz servings)

Ingredients:

  • 12 Bunches Cleaned and Trimmed Kale
  • Juice of 12 Lemons (Squeezed)
  • 16 Apples (Macintosh or your preference)
  • Salt and Pepper
  • Olive Oil

Directions: Chop Kale into bite sized pieces and gently use hands to “bruise” the leaves. Juliennes apples and drizzle with lemon juice. Combine Apples and Kale. Season with Salt and Pepper. Drizzle with Olive oil and toss to coat.
